    I Think it’s quite in front of me, but at the moment can see the forest for trees not.

    I want edit which pages and posts are shown in the header menu. and in which order.

    One might guess it’s in Design -> Header but it’s not.

    Compare the Links in the Header Menu:

    “Leitbild Seminarprogramm Mediation & Teamklärung Beratung & Coaching Team Kontakt”
    This is how I want it (and once had it done, as you see, before a data crash)
    These links are a mix of ‘pages’, ‘posts’ and somehow a link to the automatically created page by the plugin events (called ‘Seminarprogramm’ here)

    After the crash, it looks like
    http://www.rheinmediation.de/
    “Familienmediation Impressum Leitbild Team”
    links, which point to ‘pages’ and are automatically created by wordpress.

    I somehow managed to manipulate the content of the Header Menu but can’t remember how. I figured it’s a feature in your theme, though.
