How do I add the grey page title field under the menu as is used on theme preview?

Hi mail5,
After creating the page( Contact Us page or any other page), You will automatically have this field. The text in the right side is from the Breadcrumb NavXT

If you want contact us to display then select the template from the contact us page, View this screen Shot.
