Limiting Category Options in Sidebar Widget

I want to include the category sidebar widget in my website, but there are certain categories I don’t want to include. How would I remove them from showing up in the sidebar but still have the rest visible?

We have designed our theme this way. This feature is not available. You need to hire a developer to fix the issue.
