When we set our ‘publications’ page to be the Post page in the Reading option, the options for the templates for that page disappear.
The layout of this page is therefore different to all of the other pages, which has the title of the page at the top in a coloured bar.
Are you able to tell me how to bring back the page template options?

Hi Rachel,

If you use post page in the reading options, then your page template will will be displayed. You cannot add template for post page. If you want to assign the page template for your post then in the Reading options you can use front page instead of post page for it.

Please don’t use post page for that page. Use Front page instead of Post page. Then only your template will not be disappeared.
