Could I somehow prevent some categorized posts in this pague?
Appearing on the main page in their category within a widget but not on the page where all posts appear in order

can be?

And in a similar idea, I can prevent a widget that shows the “latest posts”, also avoiding a specific category.

Sorry you cannot avoid the specific post on widgets or the specific category on latest post. for that you need to hire a developer to customize the code for you.
